At Namsnails it is of vital importance to ensure that our escargot is of the highest quality. To achieve this, all Namsnails employees have received rigorous training in Hazard Analysis and Critical Control Points (HACCP) over the past week. Our staff eagerly attended the training sessions and learned a lot.
For those who do not know, HACCP is a systematic approach to food safety and is an international standard that is accepted everywhere in the world. The first step is to analyze the processes on the farm, then identify all the possible risks or hazards that can appear at any stage, and lastly, learn how to handle those hazards.
The HACCP training provided the employees of the farm with knowledge and skills to handle food safely and recognize potential biological, chemical and physical risks that could compromise the quality of the snails. Understanding basic features such as managing sanitation, temperature control and handling procedures ensures that our farm produces healthy escargot for export.
For Namsnails, it is important to equip our staff with the right tools to uphold high food safety standards. Ultimately, HACCP training is essential to maintain the integrity of the escargot from farm to table.
